I've cooked it a few times. Deer is very lean and muscular, meaning if you cook a roast anywhere past medium, it'll turn into SHOE LEATHER. If you're going to cook it on a grill, wrap the roast in strips of bacon to seal it (it gives a nice flavor too). Do not add salt while cooking, but seasonings like thyme, pepper, bay leaf, and dry mustard work well. Keep a can of water on the grill while cooking to keep a moist heat going.
Cook to around 145 degrees (F). As with all grilled meats, the internal temperature will raise 5-10 degrees after removing it from the grill, putting it at a perfect 150-155.
I personally don't care for venison, but I appearently cook it well 🙂
