Wasnt sure which computer forum to put this in, so I figured ill put in OT. Mods feel free to move to a more appropriate forum.

So, my uncles company had a website at a certain URL. Good news is they still own the domain name, but the Name Servers point to these people:

http://www.networksolutions.co....jsp?ip=205.178.190.17
http://www.networksolutions.co....jsp?ip=205.178.144.17

This is the ARIN details for DNS:
InQuent Technologies Inc. INQUENT-2 (NET-205-178-128-0-1)
205.178.128.0 - 205.178.191.255
Network Solutions, LLC NTSL-02 (NET-205-178-184-0-1)
205.178.184.0 - 205.178.191.255

How do I go about helping him get control over the DNS entries, so they can have the website up and running again with a new hosting company?

I'm no expert, but shouldn't you be able to change the DNS via the name registrar? Assuming that you didn't host with your name registrar.

The registrar is whoever you own the domain with. If they still own the domain then simply change the DNS with your registrar. If you don't know who the registrar is, how do you know you own the domain? Whois will not necessarily give you accurate information.
