Help, RAID!

I'm getting low on space again and am thinking if I'm upgrading to another HD than I need either an ATA controler card or a raid card. I hear RAID gets great speed on large files, and I do lots of file swapping, and would like to get a bonus.

I want to set up my first Raid system, but I have a few questions.

How does RAId w/ striping affect performance?

MP3 & Video files (5MB, 50MB, 200MB, 700MB):

The programs I use most are:(and have no real problems)
Internet Explorer
Windows Media Player-sometimes video stops while audio plays on huge files (full length DVD rips)
Winamp
Musicmatch
Adaptec
Microsoft Visual Studio (c++, Vis Basic)
Games:
Battlefield
Unreal2003

How big does a file have to be before it really speeds up?

On read and write?

What kind of transfer speeds should I expect?

Here's my specs:
P4 2.4B
ATI 9700 128MB
768 PC2700
CD-RW
DVD-R
-these take up both IDE's for optical drives
60GB 7200-os and apps
80GB 7200-mp3's and video
-these take up both IDE's for HDD's
I also have a 100mb network and frequently share files

and also have these drives at my disposal:

I'm considering either using the 2 30 GB or buying another 80 GB. possibly getting a 3rd 30GB for RAID 5, but the 60 GB provided would be full immidiately, and I dont really like that.

I would like to get a controller card to go RAID 0, then put it on either the primary master(OS+apps) or primary slave (mp3+vid)

One thing I would like from the card is the ability to later setup a second RAID so I can eventially run 2 RAID arrays.
(30+30 in RAID 0 w/ os + apps, and 80+80 in RAID 0 for media storage)
Also I'm not greatly concerned with using an extra drive for parity, but it would be nice to have the option to do it later when I have the cash to by another drive to backup my media (os and apps can be reinstalled, but 60GB of movies and 30 GB of music will take some time to get back).

Can anyone answer the questions about speed? or recomend a good card? I here alot about Promise, are they good? How much should I expect to spend on a card like this? would it be better to get 2 cards? I have PCI slots for 3 more add ons, so I've got room if I can find room for the drives. --any pointers on how to mount more than 2 hard drives in a dell tower?

One other thing, I was wondering if there is anything usefull I can do with these older odd sized drives? I have another PC that is used as a downloading server, I've considered getting a ATA card to get use from them too, but dont want to spend much.

I know that's alot to ask, but thanks for any help you can provide.

eh, bump

So basically,

1. What kind of transfer rates can you get with 2 7200RPM drives in RAID 0?
How does file size affect this? How big does the file need to be to appriciate the difference?

2. Is it better for OS, Apps, or Media (mp3, Videos (large:700MB))

3.What Kind of card can handle having 2 Raid arrays (4 or 5 drives)

Most PCI RAID cards I know of can run 2 arrays. I have a Promise FastTrak SX4000 and I know that it can do 2.

Edit: Here is Promise's 6 channel model. I hope you have a big case.
