Well I'm no expert... :\
But this is what I've been doing, this card is probably the most finicky card I've ever overclocked.

Then I start at the low end, because I disabled ULPS and Force constant voltage my card doesn't downclock/undervolt, but I don't want to waste power on the desktop or web so I create my first profile with the lowest possible settings for Profile 1. Then I go stock /w under volt for Profile 2, followed by another bump in core /w a decent vram overclock but nothing crazy I want to leave that voltage at stock and focus on core to start, and so on until I reach the upper end of what I expect to run the card in the most demanding titles as far as core goes. After I get those set in I go back and start tweaking the ram.
I do this with a list:
With my 7950 I've found so far out of about the 12 games/synthetics I've tested modded Crysis 2 was the hardest to run and really broke my voltage back. But that's really another matter, the point being start with a baseline in a decently demanding game (I chose BF3, across several maps) and go from there.
Once you get that done, then move on to tweaking your vram and making slight adjustments to voltage as needed upward for each engine.
I should also add I went with a 1C for 1% fan profile across the board, you may want to do something different depending on your preference. However if you plan to use it 24/7 in gaming do not set or allow the fan to go any higher than what you can tolerate for that need. Meaning don't set your clocks/voltages based on 100% fan speed, if you aren't planning to run it at 100% fan speed :\
