A little background info first.

I started university 4 years ago, and throughout it I lived the unhealthiest lifestyle I've ever lived. Basically my diet consisted of mostly fast food (McDonalds, Burger King, pizza, wings, chicken fingers) and most of what I drank was pop and beer. I also got no exercise. Over the 4 years I gained about 20-30 lbs, I was at about 210 lbs this summer.

So I've been hitting the bike hard these last 2 months, but haven't seen much results in weight change, I dropped about 1 or 2 lbs total. I haven't been out in 5 days as of today, mostly because I either don't have the time, or it's been rainy and cold, but I've lost between 5 and 6 lbs over the last few days. I weighed myself today at 203 lbs.

Why am I losing weight faster when I'm not riding my bike?

Could be a million different reasons, most likely diet. Are you weighing yourself at the same time every day (i.e., right when you wake up?). Your weight fluctuates throughout the day as well.

You might be gaining muscle mass to counteract fat loss, when you're exercising.

When you're not exercising and losing weight, it could be both fat and muscle that you're losing due to limited caloric intake.

My diet doesn't really change depending on whether I exercise or not, I may just eat a little more at dinner, which is usually right after I bike, and it hasn't changed this last week.

Is 5 or 6 lbs enough to make a change in waist size? I haven't really noticed any difference, but I only wear one pair of jeans throughout the week (work jeans) and they were always a little oversized so I just use a belt.

I realize I'm probably not doing what I need to do to maximize fat loss, but I'm not really too concerned about my weight. I just want to lose this neck fat.

My weight regularly fluctuates 10lbs @~230 and I don't notice a change in my waist.

As far as the weight loss goes, it could possibly be water weight. Or depleted glycogen stores. Or your scale is like my old one and it's not very accurate. If you're not concerned about the weight the don't worry about it, just judge your progress on how you look.

Also just because the scale isnt changing anymore doesnt mean you are not losing anything. Since July I have stayed right around 205 but have taken another 2-3 inches off my waist. I should of taken pictures last year when I started working out/eating healthier so I that I could get a real good look at the change. But I didnt.

Yea the weight number on the scales doesnt tell the whole story.
My weight hasnt dropped but 20 pounds past 2 1/2 months, but I lost 10 inches in the waist alone..

People tend not to lose weight during endurance activity due to the intense regulation of metabolism. As you drop your activity off, the body regulates it less well so it's easier to undereat.
