Help Me in Understanding Temps

I would like to know how accurate the temp shown in the bios is and how different it is when compared to asus pc probe. i notice that the temp on the pc probe is lower than the one in the bios. so which is more accurate? and where do they actually measure the temp of?
 
Well 1st off we need to know what mobo you have. And if u ask me i would trust the BIOS more, but you still need somethin to monitor temps under load.
 
i'm using the asus p4c800. i changed my hs to the cpumate DIA-21501 and now my 2.4c is working at 3.0. although there is no change in temp according to my pc probe but i'm unsure where the probe actually gets it's temp from. is it in the cpu itself?
