Fermented food is great.
Do you gross out when meats are left un-refrigerated and left to hang to dry and make delicious salty meats?
Last night I watched Andrew Zimmerman, and some Japanese gourmand eat some of this stuff. They both managed to choke down one piece, and Andrew said it was one of the foulest things he has ever eaten.
I love cured meats, and even pickled fish. Hey I even like to use fermented fish sauce in some recipes, but when Andrew Zimmerman can't eat the stuff, it might just not taste good to many people.
