Well done wagyu steak? What the hell is wrong with these people?!?

BTW, my brother-in-law tried to buy an expensive cut of beef to make into ground beef. The butcher said forget that and refused to sell it to him. Lost a sale but it was the principle of the thing... and I kinda agree.

Funny thing is, I don't think it even makes good burgers. For example, highly lean ground beef seems to make flavorless patties.

American and Canadian wagyu as I understand it is beef produced from cattle in North America that are either full wagyu or else mixed with other cattle species. However, either way, the farming methods usually aren't quite the same as the boutique Japanese ones. Hence, the American and Canadian wagyu or wagyu mixes (esp. the latter) are significantly cheaper.

The few times I've had it it was nowhere near as marbled as the pictures of Japanese wagyu beef. (I've never had Japanese wagyu.) However, I don't think I've ever had the best North American wagyu. I've also had wagyu burgers but my guess for that is they just take the left over crap after butchering and grind it up for burgers. It was fine, and just tasted like a juicy burger, but you can get the same taste just by using fatty ground beef. I really dislike lean ground beef for burgers by the way.

I think it was for some casserole or something. But yeah, I agree about the lean ground beef and burgers. See above.

Of course highly lean ground beef is going to be flavorless. The taste is in the fat.
