I would think so, my WD80SE makes enough noise to notice, so I would think the drives you're buying will, especially since they aren't fluid bearing. On the other hand I doubt you will find a very silent 1 tb setup...
The Maxtor 160GB (dual platter) I have is quite noisy. I can hear the seeks while at the PC. My Seagate 7200.7's seeks are inaudible once the lid is on or when my ear is farther than 6 inches from the drive. I'd get 5 7200.7's if they have a 200GB version (do they?)
You might consider the new Hitachi 7K250 SATA drives. Fluid bearings = quiet. I've got 2 of the 80GB variety in my rig and they are quieter and faster than the WD 1200JB they replaced.
