Well, i know of how to play texes hold'em and omaha (Due to ESPN).

What are some other variations?

Are there any that don't require a dealer?

Just name it and i'll google for rules.

...how exactly would you propose a card game with no dealer?

edit: and stick with Hold'Em. Definitely the best one if you've got ~6 people.
