I'm surprised you guys do this, it sounds like way too much effort to me. Is the taste that much worth it?

Yes. Not even close to what comes out of a jar. We use it when we have jumbo lump crab as a dip/aioli, it's fantastic.

There's a bit of elbow grease involved if you want it the right consistency. I usually use a hand mixer myself :)

But the video makes it look really easy. It's hard to tell what the end product looks like though so it's possible it's a little on the liquidy end I guess.

Vitamins. Get your vitamins. Also a cooling off period in between batches.

Done it a few times ... tastes great but I'm too lazy to do it often.
