I remember tapping the trees, hanging the buckets, and coming back to harvest the liquid. Takes about 50 gallons boiled down to get a qhart of good syrup. (Ok, it's an exaggeration - but not too much)

It's pretty tasty right out of the tree - tastes like slightly sweetened water..

Real stuff is soooo much better. We used to get it from relatives who would make it themselves. It was soooo awesome.

Yep.. During the winter/spring transition, when its warm in the days but freezing at nights.. I used to injur maple trees.. when you would come back the next day, there would be - sometimes pretty large - icecicles hanging off the trees. They were pretty good. :)
