u suck @ teh frying. :p

how do yours turn out? maybe theirs are similar to the "Roasters" potatoes, in that they are already somewhat coloured before they're even cooked - so it might not be your cooking at fault.

of course, taste is the main concern... :)

I buy the bags of the pre shredded potatos, maybe those work better I dunno.

Heat up a few table spoons of oil in 12" fry pan. Layer potatos about 3/8" inch thick, pack them down with your spatula.

Fry till they're golden brown, then drizzle some more oil on the uncooked side. Flip entire mass. Brown other side.

Usually then I mix them up a bit to fry the inside a little bit. Remove from heat, cover with cheddar.

Mmmmm!

you need a hot skillet with fairly dry pototos to start. add some oil and let them cook. dont slosh them around. that should work!

hmm....i just made some hashbrowns, before i read the hints here.

i boiled the shredded potatoes first. i usually just shred and throw them into the pan. the boiling seemed to take the starch out and made them a little more like restaurant style potatoes.

i still couldn't get that browned crispy goodness :(

I always fry my bacon first and use the bacon grease for the hash browns and whatever is left over after the hash browns are cooked, I then fry my eggs in the rest of the bacon grease. That's some good stuff right there.
