How do they determine exactly who gets the upgrade if coach gets oversold? Does this mean it pays be be last in line when boarding?

there is a reason flight attendents close those curtains... the stories I could tell.

I'd guess they have that figured out before boarding, and give it to the person who has the most "elite" FF status or paid for the highest coach fare class.

I almost always buy a first-class upgrade at the check-in kiosk if it is <$150. Nicer seat, at least a little food, free booze, and lack of small screaming children make it worthwhile for cross-country flights. I don't think it's worth it though to pay full-price at booking, it can be pretty ridiculous for even short flights. And I don't rack up enough miles to regularly qualify for upgrades.

I hardly fly international, so no first or business class for that though. I'm flying coach from LA to Sydney soon though.

I flew business class on KLM and they were pretty good. Food was better, seats were more comfortable; however if it was a personal trip that I was paying for myself and was not deductible in any way, I would have saved the money and gone coach.
