i just got back from the bellagio on sunday . . .

their brand new Spa Tower is REALLY GREAT (plus, we were the first guests in our suite! :))

but don't let them trick you into wanting the Spa Tower room . . . IIRC from a couple years ago, the main tower suites are still a little bit bigger (plus you can get a better view of the strip and lake)

The Luxor looks pretty nice . . . basically, if you stay at any hotel on the strip, it should be fine

Monte Carlo is reasonably priced and has pretty good service. ~$59/night for a room with 2 beds. It is right on the strip too.

haven't been in quite a while, but last time we went, my wife and i enjoyed staying at the golden nugget. rooms are nice, cheaper tables across the street, and the nugget has a nice spa where you can get a massage or enjoy the sauna.
