hard drive terms questions

what do buffers do??

I'm looking at an OEM hard drive. I have an IDE cable, so should I get that, or go for retail

They're caches, which store data for quick access. An 8MB buffer is optimal.

Go ahead and get the OEM drive if you have all the necessary cabling.

It's non-operating G's (not GS). It's a measure of what kind of impact the drive can absorb without damage when it isn't on. It's not anything you need to worry about, just ignore it.
