I have a refrigerator full of homemade Christmas tamales. There are the standard meat tamales, New Mexico chile with cheese tamales, Jalapeno with cheese tamales and Carnitas tamales.

I have been sampling them all afternoon. Damn, I am a lucky guy.

BTW, they were all made right here in my kitchen. No store bought tamales in this house..

A tamale is meat wrapped in a cornmeal dough, then you wrap the whole thing in a corn husk and steam it.
