Seven was poorly lit. Iron Man is well-lit. There also is likely a substantial make-up difference. I imagine it would be more obvious if you didn't compare apples to oranges.

Maybe she stays indoors a lot or uses sunscreen a lot. Also car windows started blocking UV in the 1980s. This can help slow aging of the skin.

If you look up some recent press photos you can see some minor signs of aging. She still looks much younger than she is and extremely hot.
