During the fast part it did kind of look a bit fake so I'm not sure either. Didn't seem that the notes were going in the same direction as the balls but since he had background music it could have just been the overlap of sounds.

I have a feeling the entire keyboard is one large single pressure switch, and the notes are prerecorded in order. A note is played for every ball strike.

Much like a childrens toy. Each time you press a button, any button, the next pre-recorded note is played.

I saw that a few months ago and still am amazed by his ball whack/smacking abilities. If anyone has a non messed up streaming crappy copy of this I would like to have it to keep.

It's not being played how you think. A close friend is a professional pianoist going on 20+ years now. He's met this guy and one or two others that do this performance. He didn't get into specifics, but it's along the lines of one pressure point as someone else mentioned.
