With ground lamb, I mix rosemary, worsteshire sauce, spicy mustard, and garlic, (iirc, can't find my recipe), and baste lamb burgers with it and grill them outside. Awesome results.

I made kibbeh out of ground lamb and bulghur wheat last week, and had it with Greek yogurt. Was pretty good though I need more practice.
(one recipe, another one, I kind of used a combination of the two.)

I think lamb is primary, being that it's Irish, no?

Sounds good. Although rosemary tastes fantastic it's a bit tough to actually eat in something.
A trick I learned somewhere is to juice a lemon into a bowl, then take some sprigs of rosemary, lay them on a cutting board and whack them with the back edge of a knife to damage the leaves and make them ooze rosemary juice. Dip them in the lemon juice and let them sit for a few seconds, then use them as a brush to brush the rosemary/lemon juice on the burgers when they cook.
