2) caramelize onions in bacon fat

combine onion and bacon, slather on top of liver..

serve with a side of fava beans and a nice Chianti..

Mmmmm. I love liver and onions. Really great caramelized onions take a while to do right. Cast iron pan, medium-low heat, stir every couple of minutes. For at least 45 minutes.

I like raw onions, but can't stand grilled or cooked onions
I like grilled or fried bacon, but not raw bacon.

Go figure.

If the onion is not in ring form and deep fried,.. it can go fuck itself.

If the bacon is not crispy and lean,.. it can go fuck itself as well.

I do not prefer one over the other frankly,.. but, if I had to choose,... bacon. Because grilled onions are not onion rings - bleh.

I resisted trying liver my whole life (just like Spam) and finally tried it at an Egyptian restaurant...what the heck, it's amazing! Super meaty flavor. MFW I realize I've been missing out my whole life: D:

I have to say, the bacon thing is getting a bit excessive. I like bacon, it's really good, but it's not the greatest thing ever as some make it out to be.

Grilled onions are also really good, and honestly I would have them equal by law (ie having the same density function) meaning that there is about an equal probability that a given person will like bacon and grilled onions with similar strength of enjoyment.

Doesn't roasted garlic indicate a level of sophistication in preparation and presentation that far exceeds grilled onions?
