Good host for a n00b?

So essentially, it's okay to start out with one of the normal packages, but if the site got popular with a lot of something like forum activity, we'd need to switch to a dedicated server plan?

That would be something to discuss with the host, but yes, generally the more active the site gets, especially if it uses dynamic content, the more powerful the hosting solution will have to get. It's always best to choose a host that you like and grow with them. Most hosts can easily start you off on the most basic package, and upgrade you along as the site grows. Once you outgrow their shared hosting they should easily be able to accomodate you on a dedicated box, or recommend you to someone else.

Yes most hosts will allow you to upgrade to a more expensive plan with higher resources.
