This has got to be one of the best cooking shows on TV. He's a little annoying sometimes, but I like how he doesn't just tell you "do this and this" he tells you why... like with scrambled eggs, he said to start them on low heat until they start to coagulate, then crank up the heat to finish them up quick because if you crank the heat up right away, the eggs will coagulate before the protein creates some sort of structure which traps water, and you'll end up with dry eggs in a puddle of water, and if you cook them too slow the water will evaporate before the eggs coagulate and you end up with dry eggs.
