The Sharp Tip ones.

We've used these knives in my sandwich shop for years. They are razor sharp, and disposable. They aren't pretty to look at, but MAN once you get used to having them around, you can't live without them. And the great thing is, they are disposible. So you don't feel bad using them for anything. I use them far more often than the $500 set of Henckels I have. Not only because I'm not afraid to hurt them, but because they perform like champs.

Except that those knives are cheap flimsy junk that will go dull within 6 months of use. They'll probably also start to rust if you get them wet.
 
Go to Sam's Club or Costco to the commercial food service area--not the area where they sell blenders, etc, but to where they have chef aprons, ladles, chafing dishes, high-heat spatulas, etc
 
You know, you guys really shouldn't ignore my suggestion of those industrial disposable knives.

Once you get used to having them around, you'll hate living without them.

You do realize that Sabatier 14 piece set for $20 is only $3 more than those 3 disposable knifes?

I'll bet you any amount of money thay aren't nearly as sharp. Those industrial (universal 12 pack) knives are basically serated razor blades.
