Going to France today - Tipping practice there?

I'm on my way to Paris today, then Provence and the South of France. What should I tip in bars, restaurants, hotels, B&Bs and for the taxi?

they only accept tips in francs, and spitting in your face is a customary way of saying 'thank you.'
