Smoked BBQ chicken this past weekend breast/thighs 250 degrees 3.5 hrs. Kept beer in liquid reservoir. Came out smoky and soft.

Next time I'll take a pic.
 
Just picked up 2-20 lb bags of charcoal up @ Lowes for $8. It's not lump, but @ that price I don't care. I almost always just do grill stuff, but really want a smoker. We live in an apartment though and there's no way I have room for another outdoor cooking apparatus.

Is there anyway to convert this Weber 22" grill into some sort of make shift smoker?

I agree on the BBQ sauce though. Most of it is way too sweet. Vinegar or mustard based is the way to go.

You wont have much room but I used to smoke with my Weber. Put the wood on one side of the grill and the meat on the other side and crack the top to keep the temp down to what you want it at. With my Webber I think I could keep it between 180-190.... been some time ago though.

If you have the money a Green Mountain or a Traeger. It gets no better than a pellet grill.

I have a Traeger although if I were to do it again I'd probably give the Green Mountain a try.

If you havent try a zesty italian dressing as a mix with your rub. Apply zesty italian to the chicken inside and out on the skin then put your rub on. Good shit.

if you just shove all the coals off to the side it smokes pretty well. a friend of mine didn't even do that, he'd load the whole charcoal grate full of coals and wood chunks and dump about 15 lit ones on one side. if you have the vents adjusted properly it'll burn all night like that. the rotisserie attachment comes with an expansion ring that adds several inches to the height of the grill. can easily fit 2 briskets in it that way.

me, i use a smokenator 1000. one load of charcoal is good for about 5 hours.

this doens't work with the one touch grills but it should make smoking with a regular kettle or a WSM completely painless

First question is how much do you want to spend?

I like the Traeger Lil Tex a lot but it retails for $699.... I won mine on a local radio action for $335. I like it because I walk out and start it and can be smoking meat in 5min.

I did quite a bit of reading before I bought my smoker this year. I got the 18.5" WSM (Weber Smokey Mountain, incase you're not familiar with the abbreviation). I considered buying something less expensive (like a Brinkmann), but everything I read said to stay away from them because of their poor quality. The last thing I wanted was to be teaching myself how to cook BBQ on a smoker that doesn't make it easy to maintain a steady temperature. Also, if you buy a WSM and take good care of it, it can last forever, and if you decide BBQ isn't a hobby for you, it should hold its value for resale. Thats what I thought also but with the pellet smoker if it's been a long day and I don't feel like starting the charcoal grill up I just crank the smoker up to 400+ and throw on the stakes🙂
