1st - Will I notice a huge difference?

2nd - What do I need to do to install the new card? Just a swap, or should I uninstall the current Nvidia drivers, only to install teh same ones over?

you should see a massive performance increase.

The drivers will not permit you to use the new card without (at least) reinstalling the current drivers (driver will detect a different Device ID just for starters).

you need :
PCI EXPRESS motherboard for what ever processor you are going to use with a 7800GTX
400W + PSU :)
I recommend get 1GB of ram atleast

Installation :
Uninstall the Nvidia drivers and install the card and reinstall the new drivers
