Whoa... you are in for such a good time if you have never played the games on that list before. If you like Thief I highly recommend Thief 2, No One Lives Forever 2 as well.

I've played Thief 2 and 3, excellent games. Never played Thief 1 ...does it run on Windows XP?

Yes, it will run on XP, and like Thief 2 it has issues with dual-core processors. Most fixes for all Thief games can be found here.

Which Vampire: The Masquerade game?

Redemption was released in 2000, but I don't think it's considered to be much of a classic. It should work fine on a Voodoo 5 5500.

Bloodlines was released in 2004 and most likely won't work on a Voodoo 5 5500 gfx card. I do consider this to be a classic.

Redemption.
It won the best RPG of E3 in 1999.

Edit:
You do need the patch though as its release was pretty bug ridden.

1) Alien vs. Predator 2
2) Operation Flashpoint

I still reinstall both of these games on occasion because they are so fun.

Also add Clive Barker's Undying.

EDIT >> Can't believe nobody's mentioned RtCW.

Oh yeah...Return to Castle Wolfenstein! Played that so long ago....great game! Gotta install it one more time now that you've reminded me! :)

If you really want retro from that period, sign up for an Everquest or Asheron's Call account.

Edit - Forgot to mention: You really should give Gothic a try if you like cool RPGs. It runs fine on a Geforce 2.

Good call ... classic EQ, along with Counter-Strike Beta, definitely defined that period more than any other game. Too bad it would be nearly impossible to replicate either now.

I know this prolly isnt considered classic cuz its still an ongoing MMO, but the original EQ before all the expansions, I was wondering if we will ever be able to create our own servers and run them ourselves with friends. This seems like it should be very doable hardware wise. I think the EQ classic would be perfect! Will sony ever release the code and rights to have self owned servers?

Hard to say... the game was very CPU dependant. I managed to run it with a Geforce 2 (with an old P2). The framerate was pretty bad, but didn't get worse the higher the resolution. Think I lost a half-frame going from 800 to 1024.

How about Alice or F.A.K.K.2?

No ... they have been shutting down third parties that have attempted this. It's a shame, because early EQ was about as good as it gets for a PC gaming experience.

So yea, I just ordered/purchased a Dual P3 system with a Voodoo 5 5500 to get some retro gaming action going. What I need is a list of must-play games from 1998-2002. The system will be top of the line for the year 2000, so keep that in mind.

So far on the list:
Baldur's Gate II
Deus Ex
Gothic
Grim Fandango
Half Life
Icewind Dale
Max Payne
Myth
No One Lives Forever
Planescape: Torment
Quake 3
Red Alert
System Shock 2
Thief - The Dark Project
Tribes

What else should I include?

Dual P3's FTW!
