By default, the thing shows people as firstname, lastname. How do I set it up so it's lastname, firstname?
 
Response from Microsoft if anyone is interested.

However, as for "Global Address List", I am afraid we have not an easy method to display it as "Last Name, First Name". GAL is by design to display in "First Name, Last Name" and the data is actually stored in Active Directory on the server. We cannot change it, actually.

Why would you store names as First, Last? Am I the only one who thinks this is a bad software design choice?

Yes you do. The kicker is that the display name is automatically entered when you enter the persons name in the FName and LName fields.
