Can someone please tell me the difference between these 3?

Agreed, the gigabyte site fails to go into some of the "nuts and bolts" differences. Here is a quick summary:
DS3L - ICH9 southbride = no RAID
DS3R - ICH9R = RAID
P35C- DS3R - adds DDR3 support

The pictures and descriptions on newegg are very helpful.

There are more than 3. There is also the P35-DQ6, P35-DS4, and P35-DSP3.

there's also the plain DS3 - DS3L is DS3 "lite" - no JMicron SATA & cheaper audio codec.
