I have ripped a few DVDs to .avi format was wondering if they can be loaded onto the ipad?

It is only a 32GB model so I would have to do it often.

VLC player will play all of them. Quicktime also plays most but not all when I play them on a PC / OS X.

There are also other apps like VLC and I think MPlayerX for iPad that allow you to play .avi files.

You can convert your AVI to an MP4 with Handbrake. MP4's can be played natively on the iPad.

Yes, it is plausible. You will have to use a video converting software to be able to do that.

how do you rip dvd with closed caption to work with iPad

Handbrake will let you do it. On the subtitle tab, you can select the caption track to be ripped as soft subtitles. This will give you an mp4 file with a subtitle track that can be read by iTunes and iDevices. When you play a file with a subtitle track, a subtitle button will show up in the UI.

You mean VLC the app that was removed from the app store in January of 2011? =\ The only other VLC related options I see involve streaming the content over a local network from VLC to a VLC receiver on the device and that's fairly limited as you can't exactly take them with you or watch them without a persistent connection.
