question about VSS: If I have a drive on a server that is actually and iSCSI drive hosted on a SAN, VSS should still work if I enable it for that drive right?
I assume whatever space you allocate will just decrease from that volume after you enable?

Yes, it'll work fine. How it's physically connected doesn't matter, local or network, because VSS works at the filesystem level.
You need ~200M, I believe, for the first snapshot but then the rest are just the differences so they won't waste much space and you can cap how much space it's allowed to use.
