Yeah, S-Video is the same as composite except the colors are separated already. So it's not possible to do with S-Video, the resolution is already set.

Yes, my HD projector and a 25" RCA TV...
 
interesting... I think you're stuck unless your projector has a pass-thru video option and even then, I don't know if it would be able to do the down-conversion.
