also, chopped garlic in jars is unacceptable. the only substitute for breaking down whole bulbs of garlic is pre-peeled garlic but a high quality one - the stores by me sell I think Christopher Ranch pre-peeled garlic and it is quite good. There are cheap crappy pre-peeled garlic products though - so filter appropriately.

I believe you are right there. Just saw your comment and the onion wasn't caramelized. Now, I'm wondering... I had left the peel on, it was a bitch peeling it after baking. Couldn't I have just peeled it first?

PS I LOVE caramelized onions, I've done that often in a skillet (chopping and frying in olive oil) and refrigerated them in a jar for later use.
Nope, leave the peel on. Once it's properly cooked down it'll freely separate from the peel and be damn near a jello consistency. You can just squeeze it out of the uncooked paper really.

Bias slice a baguette and lightly toast it. Take 3 heads of that roasted garlic and mix it with a wheel of brie. Next -

I have a product that got high reviews:

OXO Good Grips Silicone Garlic Peeler with Stay-Clean Storage Case

You can peel several cloves at a time with it.

I also have Costco organic garlic powder. It is anhydrous, so best to store in smaller bottles with some rice grains for moisture absorption, and when opening a bottle, do it away from steam. It's actually pretty good, IMO.

Garlic has a variety of compounds which have a variety of health benefits. The one I can think of off hand though is allicin.

This recipe has blown up on reddit in the NYT cooking sub, which I don't even subscribe to, but I have been seeing it all over the place. 2 cloves of garlic? believe you me I will be making a double size of the recipe tonight with the girl, but will be using three times the amount of garlic after doubling that. Works out well because she is a vegetarian.
