How much difference if using it for a game server would the extra 512kb of L2 cache benefit me? Is it even worth bothering with?

No, It shouldnt matter.

amount of ram and speed/ configuration of disk subsystem could matter
how much disk is required? how many threads?
what apps?

I want to serve 4 different game servers 1 DoD at 22 players, 1 private DoD at 12, 1 CS 1.6 at 12 players, and one CS:S at 12 players.

I have a 1.5 gigs of ram and have a 3200 with 512 L2.

Your bandwidth is likely to hamper you more than that configuration. Don't sweat it.
