hmm my '67 Camaro,is easy to shift to first,but;maybe because its a Muncie 4 speed....
oh i can use 3rd from a dead stop if I screw up and forget,LOL😀,because my motor has a good torque band {no replacement for more displacement😎}
 
Rolling Stop??? Complete Stop??? That's ridiculous! You either STOP or you DON'T STOP! Simple as that!

Now that's out of the way...

I never stop at a stop sign. Slow down of course.

I usually roll and it's usually a VERY SLOW roll. I do quick rolls when, let's say there are a dozen stop signs separated by very short blocks. I hate roads like that.

When I turn right on red, I try to make a full stop first. Most idiots don't even slow down much here in CA. Gotta be careful for pedestrians, ya know.
