My fried rice recipe rules. Step by step:

1) Pick up phone
2) Call local place that has the world's best pork fried rice
3) Answer door when delivery guy rings bell
4) Pay

I'm lucky, got a GREAT Chinese take-out place about a mile away. Really good prices, the aforementioned best fried rice in the world, killer hot and sour soup and free delivery up until midnight on weekends. Son of a gun, this thread has made me hungry, gonna order a quart of fried rice and a quart of soup, maybe some General Tso's and steamed dumplings too. :D

That is, if you like eggs. But if you don't, most fried rice doesn't appeal to you, I think.

Use day-old rice. Coat very lightly with beaten egg (toss rice to ensure even coating). Fry up some scrambled egg in a wok (saves washing a pan because you're going to fry in the wok anyway). Put the egg aside. Put the coated rice in and keep mixing on medium heat.... from then on you can add whatever you like.

Everybody likes theirs slightly different. Me personally, like Howard said, use day old rice. (It doesn't taste quite the same with hot fresh rice) I cook the scrambled eggs first. I then put in the vegetables and meat (usually some peas, carrots, green beans, onions, green onions, and the chopped up meat) and let that cook for a minute or two. Throw the rice on and mix it up. Add some salt, pepper, and soy sauce and stir. Then add the eggs back in, stir it a bit, and boom you're done.

Oh yeah, I like shrimp on my rice, no peas, and sometimes shredded pork (the dry kind).

Anyway, its all about technique.
you need:
wok
peas
carrot
onion diced
scallion chopped
cabbage or bok choy chopped
cooked rice
peanut oil
sesame oil
ginger
soy sauce
black pepper coarsely ground
garlic finely chopped
whatever meat sliced or diced

the proportions are up to your taste
in the dry wok heat the black pepper until it starts to smoke (the fumes will make you cough so be carefull)
lower the heat add 1/2 tbsp peanut oil & spread it around the wok
add the meat, ginger, & garlic stirring constantly till its seared
add the veggies stir constantly untill they are seared
add the rice and soy sauce &1/2 tsp sesame oil stir constantly until you feel like eating it

you can also expiriment w/ adding ground peanuts, sesame seeds, curry spices, or (gag) MSG. limejuice never hurts either.
also you can fry the rice first in separate sessions if you want to make a lot of it, although woks look huge stir frying technique doesn't really allow you to fill it up very much.

day old [or more] rice- separate with fork into loose grains
dark soy
raw egg(s)
onions-chopped
bean sprouts-optional
any leftover meat in fridge [beef, pork, chicken, pepperoni, shrimp]-chopped fine
any bits of veggies left in fridge - chopped fine [ex: carrot, mushrooms, brocoli, pea pods]
sesame oil
cooking oil



saute onions to golden brown- set aside
add a few drops of soy & tablespoon of water to egg, then scramble - then set aside
saute meats- set aside
saute veggies- set aside
then add more oil to wok
get really hot
add cold cooked rice
stir
add dark soy
stir to even color & crisp up rice
toss everything back into wok
heat thru
shut off heat
add 2 drop of sesame oil & stir

eat


great way of cleaning out fridge and using up all those little leftover bits & pieces
