I eat pork rinds while doing the low carb thing. I have mixed feelings about the taste, can't exactly say they taste delicious to me, but when my diet is as limited as it is under a low card diet they are a pretty nice snack.
 
Actually, it's fried first, cooled in ice water, and then braised.

So yes, its fried.

Link to recipe? I have a 3lb pork belly in the freezer, awaiting a proper application. I was going to pick up some lard and pork shoulder and make rillettes, but that looks tempting.
