GraphicConverter seems to have come with my mac (bought with 10.4).

Stuff I've fooled with but don't use too much:
Chicken of the VNC (vnc client)
Cyberduck (sftp client)
Smultron (text editor that's less stupid than TextEdit)

Then there's ports of stuff that is from other systems:
Firefox
Thunderbird
OpenOffice
Seamonkey
Opera
LilyPond (music typesetter)
Google Earth
Azureus
AbiWord
Inkscape

TeXEdit is a nice Latex gui that I think is os x only.
NeoOfficeJ is a native OpenOffice port so that you don't have to run it under the hideous X.

There's also a whack of *nix stuff that you can get with Fink but it only runs with X.

Oh, and I don't have links handy for all of the above. I'm sure you're all just as capable of googling as I am :p

Probably the greatest application for Mac. I find myself hitting control-space all the time in windows at work.

for some reason I can't "get" Quicksilver. Everything I want to do is either in my dock or I can find in the finder. what am I missing?

I found nothing, link please.

Edit: And this software list includes some system tools, anyway.
