Please explain how the Klingons could have evolved so much in such a small amount of time.

Here is a picture of the early Klingons when Kirk first encountered them. Notice the lack of ridges on their foreheads and they all have goatees.

Now a few years later they have developed ridges on their foreheads and bushy eyebrows.

Even a few more years later they have even more pronounced ridges on their foreheads.
Klingon 3

I just don?t understand how species could have so much change in their physical appearance in less than a couple of hundred years without the influence of a higher power.

They're a totally different species from a different universe. It's feasible that they have an accelerated rate of evolution.

The Klingons shown were actually Captain Kirk's bastard love children from a previous mission, so they took on a more human appearance. Because of their toned down "alien" look, they were selected as ambassadors to the Federation.
