For how long do you cook souse?

The wife bought me 1 lb of souse that was on clearance for only 96 cents! The package doesn't have any cooking directions and the animal parts look raw. 10 min? 20 min?

I would boil it for 5 hours, just to stink the house up, then through it away.

You figure an hour for every five pounds. So if your spouse weighs 150lb, you're looking at 30 hours. You can greatly reduce the cooking time if you're willing to chop him/her up before cooking.

1 pkg. pig feet
1 pkg. pig ears
1 pkg. pig tails
Crushed red pepper (to taste)
Salt
Pepper
1 onion
Garlic salt or powder
1 c. vinegar

Wash and cook pig portions in salt, pepper, onion, garlic salt, red pepper and enough water to cover the meat; cook over medium heat (making sure water doesn't cook out). Cook approximately 1 1/2 to 2 hours. Remove meat from juices and debone, pig ears don't need separating. Cut all meat into tiny pieces or put in food processor. Mix chopped meat with additional crushed red pepper, salt and pepper (to taste). Add vinegar and stir well. Make sure you only cook meat with onion and discard onion after meat is done. Put mixture in loaf pan or whatever type pan desired. Let set in refrigerator approximately 2 hours, cut and serve as appetizer (serve with hard cheese and crackers if desired).

I told my girl that I'd kick her to the curb if she exceeds 120lbs, so a day or less for me!

Yup--Just pig parts squished into a slab with lots of salt and hot peppers. I sauted it for 15' and it was quite good! Kind of chewy and rubbery and slimy. Tasted like bacon.

Head cheese, also called souse and brawn, is a jellied loaf or sausage. Originally it was made entirely from the meaty parts of the head of a pig or calf, but now can include edible parts of the feet, tongue, and heart. The head is cleaned and simmered until the meat falls from the bones, and the liquid is a concentrated gelatinous broth. Strained, the meat is removed from the head, chopped, seasoned and returned to the broth and the whole placed in a mold and chilled until set, so it can be sliced.

I've never had head cheese, I think I'll have to try it some time.
