I brined a pork tenderloin, put a homemade dry rub on it, wrapped it in bacon and baked it.

I made about 4 pounds of fresh, homemade smashed taters with gravy to complement the pork.

I don't feel lilke sitting down and eating it off a plate. Do you think I can make a sammich with whole wheat toast, pork, mashed taters and gravy and not drip the gravy on my keyboard? :roll:

I drove 350 miles today, half of which was in freezing rain. I really wasn't up to preparing a feast fit for Brilliant-Savarin.
