SOme food poisoning can have a 24 hour incubation period. So it might not be just the last thing you ate.
Also, like godmare said, most problems are caused by improper employee hygiene.
Trust me, I worked at a major chain restaurant, and like most kitchens they hired immigrants who don't have a very presentable appearance to begin with. But after seeing their bathroom habits and watching guys get caught leaving the restroom without washing their hands, ughh....
