If it looks, smells or tastes weird I throw it out. But I don't usually check food freshness before using it.

Its got to smell bad or look really bad before I throw it out. I've had food poisoning three times in my life and regret nothing. I only eat when I'm hungry, I avoid meals if I can. So if i'm staring down a tub of potato salad with uncertainty you better fuckin believe its going in my stomach unless I smell otherwise.

It seems that looking, smelling and tasting is checking - other that sending it to a lab.

If you regret nothing, I'm not sure you had food poisoning.
One serious bout of food poisoning is all it takes to make you err on the side of caution when it comes to food freshness.

I've got a pretty sensitive sniffer. If it smells bad or looks "off", I toss it. I rarely look at dates. Some breads and milk go bad several days before the "sell by" date, some last several days longer. If it still smells/looks ok I eat it.

Food poisoning is a very, very remote fear of mine.

Went to the hospital once for it I was so dehydrated. Back in my college days I was talking on the phone not paying attention, I walked out the back porch and just started to eat a bag of ruffles becuase honestly, I don't mind the taste of stale chips. Well sure as anything the bag is 2 months out of date and had been open, sitting on the porch forever. Couldn't keep anything in, no gatorade no nothing. Things didn't have any trouble going out though :)

One of the unintended consequences of being ultra cautious with food is that the bacteria aren't developed to combat bad food. So, the more careful you are, the more possibility of getting violently sick if bad food is ingested. [disclaimer: no scientific proof of this]
