They are very bony so not good for cooking. They have not yet made it to the great lakes. Army Corps of Engineers is installing mitigation systems in Chicago to prevent them from reaching the lakes.

Should be good fertilizer for farms. Might be able to distill some nutrients from them for nutritional use also.
