This really depends on the Make/Model of the DVD drive, but you may be able to download the older version of the firmware from the manufacturer and re-flash the drive.
 
No, You would need to rewrite the old firmware. Which either you backed up or you would find at the manufactere's website.
 
The only way I know to do it is to replace the current firmware with a different version. Maybe find a copy of the old firmware that you replaced, then reinstall it.
