I'm looking to add about 2-4 hard drives and my case is packed so I'm thinking about going the firewire route. Is there an enclosure out there that can hold 4 hard drives?

I don't know about 4 - but here is one that holds 2. What most people do with external Firewire drives is use singles and stack them as needed for multiples.

Dual

Also, look at USB 2.0 enclosures.

Will this support two drives of 260GB capacity (160 & 100)? I know it says its been tested up to 160GB, but is that total, or each drive? I am very interested in this. It has two firewire ports...does that mean two computers can connect to it at the same time? That would be very handy.

I have this enclosure and can tell you it will NOT work with 2 computers at once. Tried it just for kicks and Widows sees an unknown device. The second firewire port is for daisychaining.
I have 2 80G drives in it so I can't help you with the 160 question.
I can also say that it has worked flawlessly for me.

It should have no trouble with those drives in that each is a separate drive letter off on a single controller. I share on two computers by using a LAN and having each 1394 drive designated as "shared." But directly outside of a LAN - I don't think so.
