I believe Wagyu just means a cow with hereditary lines from Japan.

I tend to tip 20 - 25%. But then again, fine dining is a 2 - 3 times a year thing for me.

There's no such thing as wagyu that isn't Japanese. You got hosed there too!

You can't call it Kobe beef. It's the same type of cattle. You can buy such cattle in the U.S. At one point, I briefly considered getting a breeding pair for the farm. Very briefly. Like, until I saw the price. 6 figure land, for a cow. It would be a good investment, though very risky. But, imagine how many little baby wagyus you could have in 10 years. Or, you might have dead cattle & no money.

The percentage makes sense. As someone who has bounced around a few tip-based jobs, the best end up working at the higher end places. Your server at Applebee's is not the same as your server at a five star restaurant. They are usually held to a much higher standard, especially because customers frequently expect them to know WTF they are talking about.
