File server network transfer performance?

I've got about 8 IDE drives that I want to put into a file server that's attached to the network.

Uses:

Photo storage.
Photo editing (saving 150MB -500MB files) after saving as .psd
Burning and Ripping DVD ISOs
Music

Will transfer speeds be fast enough? I'm going to be using a 1000MB/s card on both ends, and directly connecting the server to the computer.

I have two DVD burners, and often like to burn two DVDs at the same time. This requires the two seperate source drives to be on seperate channels. Can this work over ethernet? The drives will be on seperate channels on the server, but all that data will fit through that one ethernet line. Will this work?

Any idea what real world read and write speeds would be like over ethernet? Significantly slower than hard-wired directly to the motherboard?
 
There's no reliable way to predict performance iin general for an unknown system; it varies a lot according to numerous issues. 30 MB/s is however a typically-achievable goal with consumer GbE and reasonably modern HD's, etc.

DVD 16x peaks around 22 MB/s. Two of them should fit into consumer GbE with ease, however, you could get hiccups at time due to system load / etc., which should however be adequately addressed by pre-buffering.
