I think you're way too idealistic.When we 1st meet somebody and while we're infatuated with them, they become gods/goddesses in terms of their looks,later after the rush of that initial attraction wears off you're going to notice little things that you didn't see before.That doesn't mean you don't love your partner, it does mean you're over that gaga stage of love and are moving into a more mature stage of the relationship.

Sure, everyone fantasizes about what's out there. But it sounds to me like you're saying it's inevitable that, once you sleep with someone, they are going to want those fantasies and those "unknowns" more than they want you, and that seems to be a problem. A need for excitement could be to use handcuffs one night or do it in a restaurant bathroom or something, not wanting every other person thats out there just because he's had you and not them.
